Hey Stout! #CheckThisOut - Texacano Cabbage

Do you have a cabbage you want to use and you want to try something new?

Check out The Cabbage Cookbook by Ann L. Haslinger on the 3rd Floor.
Call number TX803 .C3 H37 (The cover is plain green so no photo necessary)

The Texacano Cabbage recipe on page 18 is very good. I didn't know cabbage could taste this way.

I don't like green peppers so these were omitted and I used habanero jack cheese instead of cheddar to really give it some kick.

You cook down the chopped cabbage. In another pan you saute the onion and pepper in butter then add tomatoes and spices. Pour the cabbage into a greased casserole dish, then the tomato onion mixture over the top and finish it off with the grated cheese. Bake at 350 degrees for 30 minutes.

If you have more of a sweet tooth, I'd love to hear how the Quick Cabbage Strudel or Kraut Chocolate Cake recipes turn out (pages 148 and 149).
